Poached Strawberries

Poached strawberries are quick easy to make, and can accompany many chocolate- and lemon-based desserts.

Pomegranate molasses are now quite easy to find (even Morrisons sell them!) and add depth to savoury and sweet dishes.

  1. Hull the strawberries and cut into 2 or 4 pieces lengthways each, depending on size.
  2. Place in a saucepan and sprinkle with sugar. Add the vanilla paste and pomegranate molasses. Half cover with water.
  3. Bring to a simmer and cook for 2-3 minutes, then turn off the heat and allow to cool in the pan.
  4. Store in a box in the fridge, in their liquid, for up to 3 days.

Poached strawberries are a great accompaniment to many desserts, but especially lemon tart or chocolate mousses and cheesecakes.
