You will need a sugar thermometer for this recipe. They don’t cost a lot. They last a few years and then the liquid in the tube splits.
Poached strawberries are quick easy to make, and can accompany many chocolate- and lemon-based desserts.
Pomegranate molasses are now quite easy to find (even Morrisons sell them!)
Chocolate fondants can be made in advance, even frozen, and popped into the oven at the last minute for a stunning dessert.
This all seems a bit complicated, but it’s worth it. Probably my most popular dessert. I usually serve it with poached strawberries and cream, and some sugarwork.
